Tuna, tuna ventresca and anchovy fillets in oil

The tuna is a warm-blooded fish. Amongst the different types, Smeralda proposes Thunnus Thynnus, also known as Red Tuna, which can reach 3 m in length. Its flesh is much sought-after for its delicate flavour and quality; it is a high-protein product, especially when eaten "al naturale".

Smeralda offers Red tuna or Bluefin Tuna from S. Antioco, caught according to the ancient method of the tonnara (trap nets), during the fishing season which lasts from May through June, off the coast of southern Sardinia. The fish is processed immediately after being caught, selecting the most tender part, that is the ventresca (belly). This is a top-quality product, pleasant to the palate and very tasty, excellent eaten raw accompanied by seasonal greens and vegetables.

Apart from Tuna, Smeralda proposes Anchovies in oil, ideal with buttered croutons, or added to pasta dishes and pizzas.
