Cheese in Sardinia has a history which developed together with the territory: in particular, the varieties of sheep’s milk cheese, or "pecorino" constitute an important historical, cultural and social heritage. Sardinian sheep belong to a very ancient breed native to the island; the origins of Sardinian pecorino are also strikingly ancient, since this cheese is believed to date back to prehistoric times.

The island currently offers the widest range of pecorino cheeses marketed in Europe and no less than three varieties have obtained the PDO (Protected Designation of Origin) seal, including Fiore Sardo, a typical product of the area of Gavoi. The pasturelands rich in natural essences together with the special breed of Sardinian sheep, producing excellent quality milk, ensure the uniqueness of the island’s cheeses.

Smeralda proposes a line of Mature, Semi-mature, Grooved Rind and Fresh Pecorino Cheeses, delicate Provole and Caciotte made with cow’s milk and tempting Cheese Spreads, sweet, tangy and with bottarga.
