Sea Urchin Crostini

Ingredients for 4 persons:

4 slices of toasted bread or ready-to-eat crostini
160 gr. of sea urchin meat
Extra-virgin olive oil
1 garlic clove

Preparation:

Lightly rub each crostini with the garlic clove. Place the sea urchin meat on top and season with a few drops of extra-virgin olive oil. Garnish with a few parsley leaves according to taste. N.B. To better preserve the delicate taste of the sea urchin meat, you may opt not to rub the crostini with the garlic clove.
