Pesto genovese sauce

Pesto Genovese came into being in the early decades of the 19th century. Its name comes from the method of preparation, which requires the ingredients to be pounded with a wooden pestle. The particular micro-climate found in Liguria favours the growth of a special type of basil with very well-balanced flavour and scent – hence the use of the term "Genovese" to identify this type of dressing.

The characteristic aroma of basil comes from the essential oils present on the upper side of the leaf. The ingredients of this excellent sauce, apart from the special basil, are: extra-virgin olive oil, grated parmesan and pecorino, garlic, pine nuts, coarse-grained salt and – to choice – walnuts.
